What happens on your iPhone doesn’t stay on your iPhone. It gets recorded, it’s listened to by Apple contractors who aren’t told to keep it confidential, and it’s sold to advertisers to better target you. Will Apple ever admit to it? No, but enough reports and interviews with employees is pretty damning evidence, and they have every reason to deny intentionality. Seems the privacy Apple is most concerned about is of their own shady internal practices.
